Bounty Bars

  • 2 cups Desiccated Cocnut

  • 2 tbsp Coconut Oil

  • ⅓ cup  coconut cream

  • 2 tbsp Coconut Nectar or Agave or Honey 

Chocolate Coating

  • 2 blocks of 85% Raw Dark Chocolate

  • 2 tbsp Coconut Oil

    Instructions:

    1. In a bowl, combine desiccated coconut, coconut cream, coconut oil, and your preferred sweetener. Mix well until the ingredients are thoroughly combined.

    2. Line a 15cm x 15cm container or tin with baking paper. Press the coconut mixture into the container evenly, forming a layer approximately 2 cm thick.

    3. Cut the mixture into bars of your desired size. Place the bars in the freezer for 30 minutes to firm up.

    4. Meanwhile, melt chocolate together with a little coconut oil in a heatproof bowl, using a gentle heat source such as a double boiler or microwave in short bursts.

    5. Dip one half of each bar into the melted chocolate, gently shaking off any excess. Place the dipped bars on a tray lined with non-stick baking paper.

    6. Refrigerate the bars for 30 minutes until the chocolate sets.

    7. Dip the other half of the bars into the melted chocolate. Spread a thin layer of chocolate over the top of each bar and sprinkle with extra desiccated coconut.

    8. Store the finished bars in an airtight container in the refrigerator or freezer until ready to enjoy.
