Nettle Tofu Palak
INGREDIENTS
1 teaspoon coriander powder
1 teaspoon cumin powder
1 larger onion
1/2 teaspoon turmeric powder
1 tablespoon grated fresh ginger root (or 1 teaspoon ground)
1 teaspoon garam masala
3 cloves of ginger
1/2 can of diced tomatoes or 2-3 fresh tomatoes
1/2 chilli or a pinch of chilli powder (optional)
250g fresh nettle
METHOD
Heat a pot with oil.
Cut onions on small cubes and fry on the oil till they turn golden.
Add all the dry spices, garlic and ginger. Cook with the onions for about 5 min.
Add the tomatoes and let sauté and mix all together for another 5 min.
Add nettle and pour over 2 cups of hot water.
Cover with lid and let all simmer for about 20 minutes.
Turn off the heat and bled with the hand blender till smooth.
Cut the tofu into small cubes and fry /saute them slightly till golden from all sides.
Add the tofu to the nettle mixture
If you feel you can also cook separately a bunch of potatoes cut into small cubes and add to the nettle palak in the end together with tofu.
